FUSION - FRESH SALMON FILET SERVED WITH VEGETABLES CHIPS

Ingredients

  • salmon filet kg.0800
  • grape seed oil Cl.2
  • seed oil dl.5
  • salt pinch
  • black pepper pinch
  • fresh spinach leaves Gr.100
  • celeriac Gr.100
  • butter 4 tbl.sp
  • Ponzu soy sauce 4 tbl.sp
  • rice vinegar 8 tbl. sp
  • lime juice 2 tbl sp
  • salmon eggs 2 tbl sp
Cooking Procedure
Season the salmon with salt, pepper and grape seed oil. Place on a grill and and cook only one side Fry the spinach leaves and thinly slice the celeriac and serve with soy sauce garnish with salmon eggs.
