MEDITERRANEAN SUSHI
Ingredients
- 35gr Noodles
- 50grSea bass
- 50gr Sword fish
- 30gr Shelled Prawn
- 5gr Asetra caviar
- 20gr Fennel
- 3gr Dill
- 15gr Extra virgin olive oil
- 3gr Salt
- 20gr Lemon
Cooking Procedure
Carefully clean and thinly slice the sea bass.
Julienne slice the fennel and place the slices in cold water. Prepare a marinated
sauce with lemon juice, a pinch of salt and dill, cook the noodles in salted
water, strain and leave to cool, once cooled pour the lemon sauce on the noodles
and stir.
Place the noodles in a small round mould in the centre of the plate.
Place a small portion of sea bass, the fennel slices, dill, a pinch of caviar
remove the mould and serve.
This dish is a variety of the classic Nippon dish. Instead of rice noodles are
used. The fish is lightly marinated with lemon. Fennel is used in place of sea
weed.
