"PACCHERI" PASTA FILLED WITH POTATOES SERVED WITH CLAM SAUCE GARNISHED WITH SHREDDED FRIED LEEKS

Ingredients
  • 60gr Paccheri pasta
  • 20gr Extra virgin olive oil
  • 15gr Parsley
  • 2gr Garlic
  • 40gr Leeks
  • 70gr Clams
  • 100gr Potatoes
  • 1grHot pepper
Cooking Procedure:
After boiling  the potatoes  peel and mash them. Season with salt, pepper parsley and hot pepper. Julienne slice the leeks, flour and fry. Leave them to dry on a warm plate.
In a wide pan steam open the clams with garlic and parsley, remove from the shells and filter the juice.
Cook the "paccheri" in salted boiling water, strain the pasta and leave to cool down, once cooled  fill half of the pasta with the mash potatoes.
Place the "paccheri" in an upright position  ornate each filled "paccheri"  with fresh blade of grass.
Place the pasta in an heated oven for 20 minutes. Place the pasta in a plate and serve with clam sauce heated and fried leek strips.
