BANNER FISH RAVIOLI WITH SEAFOOD AND SEASON VEGETABLES
Ingredients
- 80gr banner fish filet
- 20gr extra virgin olive oil
- 3gr salt
- 50gr mussels
- 50gr clams
- 60gr shrimps
- 30gr courgette
- 30gr carrots
- 30gr leek
- 1gr garlic
- 10gr parsley
Cooking Procedure
Pay special attention when slicing the fish; remove all fish bones and external
grey skin.
In a wide pan heat oil, garlic, parsley and shellfish.Cover until all the shellfish
have opened.
Remove its internal and filter the juices. Shell the shrimps and slice them along
the back. Peel the carrots, julienne slice the leeks and courgette. Fry the remaining
leeks for decoration.
In a greased oven ban, place a filet of banner fish, cover with a portion of
shellfish, shrimp and vegetables. Place another filet of banner fish on top salt
and pepper. Place in the oven for 10 minutes until cooked.
Place the cooked banner fish on a light bed of filtered juice, sprinkle with
fried leek and a few drops of olive oil.
