DEEP FRIED SEAFOOD WITH VEGETABLES SERVED WITH A BITTER SWEET SAUCE
Ingredienti
- 60gr squid
- 50gr shrimps
- 30gr prawns
- 20gr cherry tomatoes
- 20gr courgette
- 20gr aubergine
- 30gr lemon
- 20gr balsamic vinegar
- 10gr honey
- 5gr white onion
- 1gr salt
Cooking Procedure
Clean the shrimps, squid and prawns and remove all excess water. In a deep pan,
heat oil at 180° and carefully place the fish in the oil.
Cut the vegetables, in long slices, and tomatoes. Place the vegetables in heated
oil and fry for 5 minutes. After frying place on paper towels to dry. Serve in
a paper cone with a slices of lemon and bitter sweet sauce.
Bitter sweet sauce
Stew the onion add balsamic vinegar and honey. Reduce to 1/3 rd then filter. |
